Birthday Cake Blondies

These are a great sweet treat that are more on the healthy side of the dessert spectrum. Refrigerate the leftovers…if you have any!

Ingredients
  

  • 1 cup creamy unsalted, unsweetened almond butter
  • ½ cup pure maple syrup
  • 2 teaspoons pure vanilla extract
  • 2 large eggs
  • 1 Tablespoon avocado oil
  • 1 Tablespoon super-fine almond flour
  • 1 Tablespoons arrowroot flour
  • ½ teaspoon baking soda
  • ¼ teaspoon kosher salt
  • 1 cup chocolate chips
  • cup+1 Tablespoon sprinkles

Instructions
 

  • Preheat oven to 350°.
  • Line a 9" x 9" baking pan with parchment paper letting it hang over two sides of the pan (you'll use it to lift out the bars later).
  • In a large bowl, combine the almond butter, maple syrup, vanilla, eggs, and avocado oil and stir until smooth.
  • Add the almond flour, arrowroot flour, baking soda, and salt and stir until well combined.
  • Fold in the chocolate chips and ⅓ cup sprinkles.
  • Pour into the prepared baking pan and spread into an even layer. Sprinkle the top with the remaining 1 Tablespoon sprinkles.
  • Bake until just cooked through and a toothpick inserted into the center comes out clean, about 20 minutes.
  • Let cool in pan. Using the edge of the parchment, lift the blondies out of the baking dish and set them on a cutting board. Cut into squares.
