



Birthday Cake Blondies
These are a great sweet treat that are more on the healthy side of the dessert spectrum. Refrigerate the leftovers…if you have any!
Ingredients
- 1 cup creamy unsalted, unsweetened almond butter
- ½ cup pure maple syrup
- 2 teaspoons pure vanilla extract
- 2 large eggs
- 1 Tablespoon avocado oil
- 1 Tablespoon super-fine almond flour
- 1 Tablespoons arrowroot flour
- ½ teaspoon baking soda
- ¼ teaspoon kosher salt
- 1 cup chocolate chips
- ⅓ cup+1 Tablespoon sprinkles
Instructions
- Preheat oven to 350°.
- Line a 9" x 9" baking pan with parchment paper letting it hang over two sides of the pan (you'll use it to lift out the bars later).
- In a large bowl, combine the almond butter, maple syrup, vanilla, eggs, and avocado oil and stir until smooth.
- Add the almond flour, arrowroot flour, baking soda, and salt and stir until well combined.
- Fold in the chocolate chips and ⅓ cup sprinkles.
- Pour into the prepared baking pan and spread into an even layer. Sprinkle the top with the remaining 1 Tablespoon sprinkles.
- Bake until just cooked through and a toothpick inserted into the center comes out clean, about 20 minutes.
- Let cool in pan. Using the edge of the parchment, lift the blondies out of the baking dish and set them on a cutting board. Cut into squares.
