Birthday Cake Blondies

These are a great sweet treat that are more on the healthy side of the dessert spectrum. Refrigerate the leftovers...if you have any!

Ingredients
  

  • 1 cup creamy unsalted, unsweetened almond butter
  • ½ cup pure maple syrup
  • 2 teaspoons pure vanilla extract
  • 2 large eggs
  • 1 Tablespoon avocado oil
  • 1 Tablespoon super-fine almond flour
  • 1 Tablespoons arrowroot flour
  • ½ teaspoon baking soda
  • ¼ teaspoon kosher salt
  • 1 cup chocolate chips
  • cup+1 Tablespoon sprinkles

Method
 

  1. Preheat oven to 350°.
  2. Line a 9" x 9" baking pan with parchment paper letting it hang over two sides of the pan (you'll use it to lift out the bars later).
  3. In a large bowl, combine the almond butter, maple syrup, vanilla, eggs, and avocado oil and stir until smooth.
  4. Add the almond flour, arrowroot flour, baking soda, and salt and stir until well combined.
  5. Fold in the chocolate chips and ⅓ cup sprinkles.
  6. Pour into the prepared baking pan and spread into an even layer. Sprinkle the top with the remaining 1 Tablespoon sprinkles.
  7. Bake until just cooked through and a toothpick inserted into the center comes out clean, about 20 minutes.
  8. Let cool in pan. Using the edge of the parchment, lift the blondies out of the baking dish and set them on a cutting board. Cut into squares.
