Southwest Chicken Salad
This is another great dish during the summer months. Grill chicken and serve with crackers, bread, or on a bed of lettuce.
Ingredients
- ¾ cup mayonnaise
- ¼ cup chopped cilantro
- 3 Tablespoons fresh lime juice
- 1 teaspoon garlic minced
- ½ teaspoon ground cumin
- 2 stalks celery finely chopped
- 4 cups chopped, cooked chicken
Instructions
- Whisk mayonnaise, cilantro, lime juice, garlic, and cumin in a large bowl.
- Add celery and chicken.
- Refrigerate until ready to use.
