Southwest Chicken Salad

This is another great dish during the summer months.  Grill chicken and serve with crackers, bread, or on a bed of lettuce.

Ingredients
  

  • ¾ cup mayonnaise
  • ¼ cup chopped cilantro
  • 3 Tablespoons fresh lime juice
  • 1 teaspoon garlic minced
  • ½ teaspoon ground cumin
  • 2 stalks celery finely chopped
  • 4 cups chopped, cooked chicken

Method
 

  1. Whisk mayonnaise, cilantro, lime juice, garlic, and cumin in a large bowl.   
  2. Add celery and chicken.
  3. Refrigerate until ready to use.
