3/4 cup buttermilk
1 teaspoon dried Italian seasoning
1/2 teaspoon salt
1/4 teaspoon ground red pepper
1/4 teaspoon black pepper
4 chicken breasts cut into strips
2 English muffins ground into bread crumbs
1/3 cup grated Parmesan cheese
Combine buttermilk through pepper into a plastic bag and add chicken strips. Seal shut and marinate in the refrigerator for 30 minutes.
Combine breadcrumbs and Parmesan in a pie plate. Coat the chicken strips in the breadcrumb mixture.
Place on a silicone mat on a baking sheet and bake at 375 degrees for 30 minutes.
