Chicken Nuggets

These are a kid-pleaser and you will feel good about making nuggets that are not fried!
Course: Main Course

Ingredients
  

  • ¾ cup buttermilk
  • 1 teaspoon dried Italian seasoning
  • ½ teaspoon salt
  • ¼ teaspoon ground red pepper
  • ¼ teaspoon freshly ground black pepper
  • 4 chicken breasts cut into strips
  • 2 English muffins ground into bread crumbs
  • cup grated Parmesan cheese
  • Ranch dressing

Method
 

  1. Combine buttermilk through pepper into a plastic bag and add chicken strips.    
  2. Seal shut and marinate in the refrigerator for 30 minutes.
  3. Preheat oven to 375°.
  4. Combine breadcrumbs and Parmesan in a pie plate.
  5. Coat the chicken strips in the breadcrumb mixture.
  6. Place on a wire rack coated with cooking spray on a baking sheet and bake at 375° for 30 minutes. Serve with Ranch dressing for dipping.
