Sausage-Egg Wraps

These wraps are a little more healthy than a traditional breakfast burrito by using reduced-fat sausage, egg substitute (my family likes egg beaters original), and whole wheat tortillas.

Ingredients
  

  • 1 12oz. pkg. 50% less fat ground pork sausage
  • 2 teaspoons hot sauce
  • 1 16oz. carton egg beaters
  • 6 8" whole wheat tortillas
  • 1 ½ cups shredded colby/jack cheese

Instructions
 

  • Cook sausage in a large nonstick skillet over medium high heat until sausage crumbles and is no longer pink.  
     
  • Drain off any liquid and add the hot sauce.
  • Cook the egg beaters over medium heat, gently stirring until eggs are thickened.
  • Spread sausage, eggs, and cheese into tortillas, roll up and place seam side down in skillet.
  • Cook 2 minutes on each side.
