Sausage-Egg Wraps

These wraps are a little more healthy than a traditional breakfast burrito by using reduced-fat sausage, egg substitute (my family likes egg beaters original), and whole wheat tortillas.
Course: Breakfast

Ingredients
  

  • 1 12oz. pkg. 50% less fat ground pork sausage
  • 2 teaspoons hot sauce
  • 1 16oz. carton egg beaters
  • 6 8" whole wheat tortillas
  • 1 ½ cups shredded colby/jack cheese

Method
 

  1. Cook sausage in a large nonstick skillet over medium high heat until sausage crumbles and is no longer pink.  
     
  2. Drain off any liquid and add the hot sauce.
  3. Cook the egg beaters over medium heat, gently stirring until eggs are thickened.
  4. Spread sausage, eggs, and cheese into tortillas, roll up and place seam side down in skillet.
  5. Cook 2 minutes on each side.
