Treat Tuesday-Key Lime Pie

This Key Lime Pie is a great dessert for the warm days of summer because it is served ice cold and this recipe has a wonderful, light, texture. It is not hard to make, there is just a lot of chilling time to ensure the crust holds together and the pie is perfectly firm.

Start with finely chopped graham crackers, it is best to use fresh crackers ground into fine crumbs in a food processor.

Add some cinnamon and melted butter, mixing just until blended.

Then carefully press into a pie pan lightly greased with butter.

Next zest two fresh limes. This really ups the lime flavor!!

Mix into three egg yolks, whipping for 5 minutes to make sure they are light and fluffy.

Add in fresh lime juice. (Make sure it is fresh squeezed!!)

Plus one can of sweetened condensed milk.

Finally, pour into the prepared crust and bake for just 10 minutes.

Let cool completely and then refrigerate for two hours or overnight.

Quite simply, the perfect pie!
