Treat Tuesday- Chocolate Cookies 2.0

These bittersweet chocolatey treats deserved a revisit! It is a great recipe if you don’t need a giant batch of cookies in the house but you want to have a few in your cookie jar. The steps are simple and these bake up quickly. Think fudge in a cookie!

Start with some high quality bittersweet chocolate. I found this at one of my local supermarkets.

Next, coarsely chop the chocolate.

Then add to a double boiler with some unsalted butter over a low simmer. Stir just until melted and remove from heat.

Whisk together eggs, sugar and vanilla. Slowly heat over the double boiler just until warmed.

Finally, add to the chocolate mixture along with chopped semi-sweet chocolate. If you are short on time, semi-sweet chocolate chips work well. Scoop into Tablespoonfuls onto a parchment lined baking sheet.

Bake just until the cookies are set and move to a wire rack to cool.

The chocolate flavor is amazing!!
