Treat Tuesday-Frosted Pumpkin Softies

This is a must have cookie for your Halloween party! It’s a pumpkin cake cookie with delicious cream cheese frosting whipped on top. This recipe makes a lot of cookies for all your ghosts and goblins!!

Start by beating the butter and sugars until light and fluffy.

Add in the pumpkin.

Next mix together flour and oats. The oats give the cookies a great texture!

Now scoop out tablespoons of dough onto a cookie sheet.

Bake until the tops of the cookies are slightly firm and remove to a wire rack to cool completely.

Finally, whip up the cream cheese frosting with softened cream cheese, milk, vanilla, and powdered sugar.

Frost the cooled cookies then place in the refrigerator to firm up the frosting. The cookies can be made in advance and frozen. Then defrost in the refrigerator and top with the cream cheese frosting.
