Treat Tuesday-Lemon Tarts
This is a recipe from my childhood that was “missing” for about 25 years! My mom, sister, and I searched high and low in our kitchens and we could not find it anywhere. We would try all sorts of variations that were good but didn’t taste like the one we remembered from all those years ago. A few weeks ago I made pie that I thought was really close but I felt like it had too many steps compared to the family one. My mom did a little more digging, and wa-la, she found it!
The greatest part of this recipe is just two ingredients (three if you count the crust) and very little prep time! You can make individual tarts or a full pie, which is what I did using one of my favorite Graham Cracker Crusts.
Once the crust is baked and cooled, grab your frozen lemonade. I used limeade and you can also use frozen orange juice! Doesn’t this just make you feel like a kid again when we would take a pitcher, toss in the juice and add water?! Juice boxes didn’t exist in my childhood!
In a large bowl, place a half gallon of slightly thawed vanilla ice cream with the frozen juice. Using a spatula slowly combine the juice and ice cream until creamy but not melted.
Carefully spread into the prepared tarts or pie pan. Freeze a minimum of 4 hours.
This is such a creamy, refreshing dessert, perfect for hot summer days!!
