Treat Tuesday-Cranberry Breakfast Bars
This recipe is perfect if you want a little something healthier on Thanksgiving morning! These bars a chock full of nuts, seeds, and fruit, plus they look quite festive for the start of the holiday season!! Cranberry Coconut Power Bars can be made a few days in advance, so they are an easy Turkey morning treat as you prepare the feast. This recipe calls for coconut which I did not have on hand and the bars still turned out great.
Start by mixing almonds, oats, sunflower seeds, flax seeds, and chia seeds on a sheet baking and baking until golden brown.
Next mix in some dried cranberries.
The glue that holds these bars together is dates! Soak pitted dates in hot water for a minute, then transfer to a food processor and mix until smooth.
Add the date mixture to the nuts, oats, and cranberries, mixing well.
Honey and peanut butter are warmed on the stove until melted, then added to the bars.
Spread the bar mixture into a pan lined with parchment and top with more dried cranberries.
Cover and refrigerate for 24 hours and then cut into bars.
These taste so good, your guests will never suspect you are starting their morning off with a “good-for-them” bar!
