Treat Tuesday-Cream Filled Pumpkin Roll

Happy Halloween!!  This Pumpkin Roll is so light and moist and the filling is truly fabulously creamy!

First the cake.  It is light and airy because egg whites are whipped into soft peaks and carefully folded into the pumpkin batter.

As it comes together you can start to see flecks of all the wonderful spices!

The batter is then poured onto a sheet pan and smoothed to the edges.

The cake bakes for about 20 minutes until it is golden brown and springs back when lightly touched.

Now to make the wonderfully creamy filling that uses cream cheese and mascarpone cheese.  More spices are added and then fresh whipped cream is folded in.

The filling is spread evenly over the cake and then rolled up.

Drizzle a little chocolate or caramel over the top.  A slice of this will help you stave off the snickers and skittles!
