Treat Tuesday-Cola Cake with Peanut Butter Frosting
The title alone makes this recipe enticing! The cake is super moist and you put the frosting on top while the cake is still warm. Once it cools slightly, the frosting oozes down the sides of the cut piece and the flavors together make you feel like celebrating even if it’s not your birthday!
I used Coca-Cola but you could substitute Dr. Pepper or Root Beer. You can’t really taste the soda, but combined with buttermilk, you have a perfect base for the frosting.
Oh the frosting. While this cake batter is “spoon lickable”, the frosting is downright dangerous. There were three of us in my home fighting over this pan and spatula once I finished pouring the frosting over the cake. We could have easily put a blob of this a plate and had that for dessert!
We didn’t really wait for this cake to cool, we all took a spatula and carved a piece out of the pan. So much for a pretty picture!
But it was worth it.
