Treat Tuesday-Chocolate Chip Shortbread
I love shortbread. So when I came across this recipe that added chocolate chips to this treat, I had to try it. This may be one of my new favorite desserts!
It is also a snap to make. To maintain the shortbread texture and not have huge chocolate chips sticking up through it (not that that would be a bad thing), you grind them up in the food processor with some flour so that they become tiny chocolate bits.
Beware, chopping up chocolate chips is quite loud…but then you end up with the perfect taste of chocolate in each bite of shortbread.
The dough comes together in the mixer super quick and makes enough for two pans.
Using your hands, you simply flatten the dough out to the sides of the pan that has been lightly buttered.
After about 40 minutes your kitchen will smell amazing. Let the pans cool slightly and turn out the shortbread onto a cutting board.
While the bread is still warm, cut into wedges and then let cool completely on a wire rack.
Warning, this is a dangerous, highly addictive treat.
