Slow Cooker Beef Brisket Tacos

This is a great weeknight recipe. Throw all the ingredients in the slow cooker first thing in the morning, and by dinner time, the brisket will be fork tender.

Ingredients
  

  • 2 onions sliced
  • 2 celery stalks sliced
  • 2 garlic cloves minced
  • 3 lb. beef brisket
  • 2 teaspoons salt
  • 1 ½ teaspoons ground chipotle chili powder
  • 1 cup chopped cilantro

Instructions
 

  • Place onions, celery, and garlic in slow cooker.       
  • Rub brisket with salt and chipotle powder and place on top of vegetables in slow cooker. Top with cilantro.
  • Cook on low for 8-9  hours.
  •  Remove brisket and shred meat with two forks.
  • Place in tortillas, top with shredded cheese and salsa.
