Chicken Nuggets
These are a kid-pleaser and you will feel good about making nuggets that are not fried!
Ingredients
- ¾ cup buttermilk
- 1 teaspoon dried Italian seasoning
- ½ teaspoon salt
- ¼ teaspoon ground red pepper
- ¼ teaspoon freshly ground black pepper
- 4 chicken breasts cut into strips
- 2 English muffins ground into bread crumbs
- ⅓ cup grated Parmesan cheese
- Ranch dressing
Instructions
- Combine buttermilk through pepper into a plastic bag and add chicken strips.
- Seal shut and marinate in the refrigerator for 30 minutes.
- Preheat oven to 375°.
- Combine breadcrumbs and Parmesan in a pie plate.
- Coat the chicken strips in the breadcrumb mixture.
- Place on a wire rack coated with cooking spray on a baking sheet and bake at 375° for 30 minutes. Serve with Ranch dressing for dipping.
