Treat Tuesday-Mini Carrot-Apple Cupcakes

Welcome to fall…well at least fall flavors! I have been itching to start some baking, so I went small with these bite sized cupcakes just in time for your Labor Day festivities!! Now is also a good time to do a sweep of your spice cabinet and see if there are any expired bottles that need to be replaced. Let’s bake!

Line a mini muffin tin with muffin papers.

In a medium sized bowl, whisk together flour, baking powder, cinnamon, salt, and allspice.

Next blend the butter with a hand mixer in a large bowl until well whipped.

Add the brown sugar, mixing well.

Add in the eggs, one at a time, blending well.

Beat in half of the dry ingredients.

Next add in applesauce and fresh apple juice or apple cider.

Finally fold in one grated carrot.

Spoon one Tablespoon of dough into each muffin paper.

Bake until a toothpick inserted into the center of one muffin comes out clean. Let cool while you make the frosting.

Whip cream cheese, powdered sugar and whipping cream until light and fluffy. Refrigerate for about one hour or until firm.

Frost the cupcakes. These keep well in a sealed container in the refrigerator.
