Roasted Asparagus with Balsamic Browned Butter
This recipe is from Cooking Light and not only is it quick and easy, the Asparagus cooks perfectly.
Ingredients
- 2 lbs. asparagus spears trimmed
- olive oil
- ¼ teaspoon kosher salt
- ⅛ teaspoon black pepper
- 2 Tablespoons butter
- 2 teaspoons soy sauce
- 1 teaspoon balsamic vinegar
- grated lemon rind
Instructions
- Preheat oven to 400°.
- Arrange asparagus in a single layer on a baking sheet coated with olive oil. Sprinkle with salt and pepper.
- Bake at 400° for 12 minutes.
- Melt butter in a small skillet over medium heat; 3 minutes or until lightly browned, skiing the pan continually.
- Remove from heat; stir in soy sauce and vinegar.
- Drizzle over asparagus, tossing to coat. Garnish with cracked pepper and grated lemon rind.
