Hash Brown Casserole

This is an old favorite that I have been making for years. If you need a side dish that feeds a crowd (or starving boys), mix this up and throw it in the oven.
Plan Ahead Note: the hash browns need to be thawed out slightly.

Course: Vegetables

Ingredients
  

  • 2 lbs. hash browns thawed
  • 1 can cream of chicken soup
  • 2 cups shredded cheddar cheese
  • 2 cups sour cream
  • 1 teaspoon salt
  • ¼ teaspoon pepper
  • ½ cup butter melted
Topping
  • 2 cups cornflake cereal
  • ¼ cup butter melted

Method
 

  1. Preheat oven to 400°.
  2. Mix hash browns, soup, cheese, sour cream, salt, pepper, and ½ cup melted butter in a large bowl.  Pour into a 13" x 9" pan.  
Topping
  1.  Combine cornflake cereal and remaining melted butter.  Pour over casserole.
  2. Bake at 400° for one hour.  Let cool 5 minutes before serving.
