Hash Brown Casserole

This is an old favorite that I have been making for years.  If you need a side dish that feeds a crowd (or starving boys), mix this up and throw it in the oven.


2 lbs. thawed hash browns
1 can cream of chicken soup
2 cups cheddar cheese
2 cups sour cream
1 teaspoon salt
1/4 teaspoon pepper
1/2 cup melted butter
2 cups cornflake cereal
1/4 cup melted butter

Mix hash browns, soup, cheese, sour cream, salt, pepper, and 1/2 cup melted butter in a large bowl.  Pour into a 13″ x 9″ pan.  Combine cornflake cereal and remaining melted butter.  Pour over casserole.  Bake at 400 degrees for one hour.  Let cool 5 minutes before serving.
