Treat Tuesday-Strawberry Crumble Bars

It’s time…for some strawberries! These bars will get you ready for all the tastes of summer with their buttery crust and a wonderfully jammy layer of berries under a crumble on top.

Start with fresh strawberries. Trader Joe’s has had some great ones lately and they sell a 2 lb. container, perfect for making this recipe with a few left over for snacking.

The berries are washed, hulled, quartered, and placed in a saucepan with sugar, cornstarch, and some lemon juice.

They cook for about 10 minutes until the berries begin to breakdown and the mixture thickens, looking very much like strawberry jam.

The crust and the crumble are made in the food processor with flour, butter, ice water, sugar, and egg. The food processor does all the work, making a perfect crumbly crust.

All but one cup of the crumble mixture is put in a pan and pressed down to make the crust.

The strawberry mixture is spread out over the top.

Then the remaining crumbs are sprinkled over the top of the berries.

The bars bake for about 40 minutes until golden brown. Let cool slightly and then cut into rectangles.

These taste like you picked the strawberries straight from your garden.
