Treat Tuesday-Pumpkin Streusel Muffins

It’s pumpkin time!! Next to Christmas baking this is probably my favorite kitchen time of the year. The air is slightly cooler and I am slightly obsessed with all things pumpkin…at least in baked goods, not so much in beverages… These Pumpkin Streusel Muffins are a great way to kick off October!!

Start by mixing butter and cream cheese until creamy, then add in the eggs one at a time.

Mix together the flour, pumpkin pie spice, baking powder, and baking soda. Slowly blend into the cream cheese batter.

Then stir in the pumpkin.

Spoon into a muffin tin.

Finally, make the best part of the muffin, the streusel topping! Mix together brown sugar, flour, butter, and some more pumpkin pie spice.

Sprinkle evenly over the tops of the muffins.

Bake for about 25 minutes. Let cool and enjoy immediately, or freeze the batch to have on hand throughout the month. Pumpkin Streusel Muffins are the perfect snack to take along with you to the Pumpkin Patch!
