Treat Tuesday-Pumpkin Cookies
It’s not Halloween, without Pumpkin Cookies. These are a cross between cake and a cookie and if you are headed to a party in the next couple of weeks, bake these because this recipe makes dozens!
You know it’s going to be a great cookie when you start with 3 sticks of butter! Softened to room temperature makes the batter so creamy.
Brown sugar and granulated sugar are added next.
I LOVE this can! You can spend hours prepping a pumpkin and making your own, but I have not found that all of that time equates a better tasting pumpkin product. Trust me on this one, stock up on several cans the next time you are at the store but make sure the label does not say “Pumpkin Pie Filling”.
Look at all this wonderful batter! Take a cookie scoop and drop balls of dough onto a cookie sheet.
Chocolate chips complete this perfect cookie. A whole bag ensures that there are bits of chocolate in every bite!
