Treat Tuesday-Peanut Butter Caramel Corn

IMG_5477I decided to stray from my “pumpkin fest” for this highly additive snack.  It is hard to beat homemade caramel corn and this is easy to make.  The peanut butter comes in the form of Reece’s Pieces, which are a fabulous Halloween colored candy and when you mix it in with the caramel corn you create gourmet Cracker Jacks (without the creepy sailor guy on the package).

IMG_5464To make this treat, start with freshly popped popcorn.  Yes, I mean actually pop it on the stove. It takes five minutes.  If you are going to skip this step, you might as well toss this recipe and buy the aforementioned box snack.

IMG_5465Once your corn is cooled, line a roasting pan with foil, coming up slightly on the sides so the caramel won’t stick to the pan and this will make stirring the popcorn easier.

IMG_5466Add some brown sugar, dark corn syrup, and butter in a saucepan and once it is melted, your caramel is ready.

IMG_5468Drizzle evenly over the popcorn and stir ever so gently as to coat all the pieces.

IMG_5471This next step works great.  Line part of your counter top with wax paper and spray with cooking spray.  Gently turn the popcorn out onto the wax paper and let it cool completely.

IMG_5478Now break the mixture up into a bowl and add the Reece’s pieces.

IMG_5481It’s going to be really really hard not to eat all of this yourself, so bag it up and share with friends.  It’s perfect for a Halloween party.  Did you ever make your own spook house as a kid with grapes as “eyeballs”, and noodles as “brains”?  I’m feeling the urge to listen to the Monster Mash song.
