Treat Tuesday-Lemon-Lime Squares
I put these together one day when I was making lemon squares and did not have enough lemon juice. I love the taste of lime just as much (margaritas anyone?!) and when you mix the two juices together you get a fabulous summer dessert!
To quickly make the shortbread crust, combine flour and sugar in the food processor. A quick pulse to blend.
Then add in some cubed butter and a little bit of canola oil. Pulse until coarse crumbs appear.
Spread into a baking dish and bake until the crust turns golden.
For the filling, start with some sugar, flour, lime, and lemon zest.
Then the lemon and lime juice. You must use ripe lemons and limes that you juice yourself. These bars are not going to taste as nearly amazing if the juice is from concentrate. It takes just a minute to create 1/2 cup of fresh squeezed juice.
Toss in some eggs and pour the lemon-lime mixture over the baked crust. Bake for about 20 minutes or until it is set in the middle. Remove from the oven and let cool completely. The bars should then be refrigerated for about 2 hours or longer.
Cut into squares and dust with powdered sugar.
