Treat Tuesday-Caramel Popcorn
“Let’s go!” as my nephew would say. It’s time to start thinking about all the wonderful Halloween treats this time of year screams for. One of my favorites is caramel popcorn and it is easy to make and the fresh flavor is so much better than you can buy in a store. It is worth your time to make a batch of this to share with friends as we usher in fall festivals.
Start with freshly popped popcorn. You can make a batch in less than 10 minutes with a Dutch oven on your stove. Place the popped popcorn in the largest bowl you can find in your kitchen!
Toss in some Virginia Peanuts for crunch.
Now make the caramel using butter, brown sugar, corn syrup, and molasses. The mixture will get slightly thick and bubbly, coating a spoon as it begins to caramelize.
Pour the caramel mixture over the popcorn and peanut mixture and gently stir to coat all the pieces. It helps to lightly coat the bowl and a spatula with cooking spray to keep the caramel from sticking to everything. Spread the mixture out onto two large baking sheets and bake for 45 minutes, stirring every 10 minutes.
Let cool and enjoy your homemade caramel popcorn.
