Treat Tuesday-Apple Cinnamon Bundt Cake
You have to love a bundt cake. Great for taking to a party, easy to cut and serve, and the fluted cake is beautiful. I also happen to think that most bundt cakes could be considered breakfast or dessert. This cake with a cup of coffee is a serious morning treat. If you are going to splurge, why waste it on a measly donut when you can have this moist cake?!
Start with a couple of Granny Smith apples, peeled and chopped.
Then add some apple cider. I prefer the refrigerated cider versus the jug off the grocery store shelf. You will have plenty left over to make mulled cider later. You can make your own spice mix or purchase it ready to drop in heated cider, either way you go it’s a great treat.
Top the apples off with a cinnamon stick. Oh, this is going to be good!
Once the apples have cooked down, they will be nice and tender for the filling of the cake.
The batter has a special ingredient as well. The seeds from a whole vanilla bean. Simply split the bean down the center and scrape out the seeds. It adds wonderful flecks to the batter and smells fantastic. I would splurge and use the seeds from two beans for this cake.
Now let the layering process begin. Batter, apples, streusel, more batter.
The apples, cinnamon, and vanilla all combine for one great snack.
Let them eat cake.
