



Double Chocolate Cake
This makes a wonderfully moist chocolate cake. Use miniature loaf pans for fun Valentine gifts.Plan Ahead Note: the butter needs to be softened to room temperature.
Ingredients
- 1 ⅔ cups all-purpose flour
- ⅔ cup unsweetened cocoa powder
- ½ teaspoon baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- ½ cup butter softened to room temperature
- 1 cup granulated sugar
- 2 eggs
- 1 cup buttermilk
- mini semi-sweet chocolate chips
Instructions
- Preheat oven to 350°.
- In a medium mixing bowl, combine flour, sifted cocoa powder, baking powder, baking soda, and salt. Set aside.
- In a large mixing bowl beat the butter with an electric mixer on medium speed for 30 seconds.
- Add sugar, beat until fluffy. Add eggs, beating until well combined.
- Add the flour mixture and buttermilk alternately to egg mixture, beating after each addition just until combined.
- Spoon half of batter in miniature loaf pans then sprinkle with the mini chocolate chips.
- Top each loaf pan with remaining batter and smooth evenly.
- Bake for 35-45 minutes depending on the size of your loaf pans, or until wooden pick inserted into the center comes out clean. Cool completely before slicing.
