Orange-Spice Banana Bread

This is a quick bread that can be made in advance, frozen, and then thawed out in time to serve for Thanksgiving morning.

Ingredients
  

  • 2 cups all-purpose flour
  • ¾ cup granulated sugar
  • ¾ teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon grated nutmeg
  • 2 Tablespoons grated orange rind
  • 3 very ripe, soft, darkly speckled large bananas mashed well with a fork
  • ¼ cup plain yogurt
  • 2 large eggs beaten lightly
  • 6 Tablespoons butter melted and cooled
  • 1 teaspoon vanilla extract

Method
 

  1. Adjust the oven rack to lower-middle position and heat oven to 350°.
  2. Grease and flour the bottom of a regular loaf pan.
  3. Whisk flour, sugar, baking soda, salt, cinnamon, nutmeg, and orange rind together in a large bowl. Set aside.
  4. Mix mashed bananas, yogurt, eggs, butter, and vanilla with a wooden spoon in a medium bowl.
  5. Lightly fold in banana mixture into dry ingredients with rubber spatula until just combined and batter looks thick and chunky.
  6. Scrape batter into prepared loaf pan and bake until loaf is golden brown and a toothpick inserted into the center comes out clean, about 55 minutes.
  7. Cool in pan for 5 minutes, then transfer to wire rack. Serve warm or at room temperature.
