Green Beans with Bacon

Not only are these beans great with Thanksgiving, they make a wonderful leftover. Make these 30 minutes before the turkey is done.

Ingredients
  

  • 2 lb. fresh green beans rinsed and ends snapped off
  • 8 bacon slices
  • 2 cups shiitake mushroom slices
  • ΒΌ cup crushed red pepper flakes
  • salt
  • pepper

Instructions
 

  • Place beans in boiling water. Reduce heat to medium and cook for 4 minutes or until beans are bright green.
  • Plunge into cold water, which stops the cooking, and then drain.
  • Cook bacon in a large skillet; crumble.
  • Add the mushrooms and shallots to the bacon drippings and cook over medium heat for 5 minutes or until shallots are translucent.
  • Add the green beans, crushed red pepper and bacon. Salt and pepper to taste.
