Halloween Sugar Cookies

This is a great cookie recipe that is perfect for decorating whether with frosting, sprinkles, or sugar crystals.  This dough rolls out easily with just a dusting of flour.
Plan Ahead Note: the butter needs to be softened and the eggs need to be brought to room temperature. The dough chills for two hours before rolling out.

Ingredients
  

  • 3 cups all-purpose flour
  • 1 ½ teaspoons baking powder
  • ½ teaspoon kosher salt
  • 1 ½ sticks unsalted butter softened to room temperature
  • 1 cup granulated sugar
  • 2 large eggs at room temperature
  • 1 ½ teaspoons vanilla extract

Instructions
 

  • In a medium bowl, mix together flour, baking powder, and salt.          
  • In the large bowl of an electric mixer, cream butter and sugar at medium speed for 4 minutes, stopping halfway through to scrape sides of the bowl.
  • Add eggs one at a time, beating well after each addition.
  • Add vanilla and mix.
  •  Slowly add flour mixture, beating just until combined.
  • Split dough in half and wrap in plastic wrap, shaping into a disc.  Refrigerate for 2 hours.  
  •  Preheat oven to 350°.
  • Working on a floured work surface, roll out dough and cut into shapes.  Place on a cookie sheet lined with parchment and decorate as desired.
  • Bake at 350° for 10 minutes.  Let cool on pan for 2 minutes and remove to wire rack to cool completely.
