Halloween Sugar Cookies

This is a great cookie recipe that is perfect for decorating whether with frosting, sprinkles, or sugar crystals.  This dough rolls out easily with just a dusting of flour.
Plan Ahead Note: the butter needs to be softened and the eggs need to be brought to room temperature. The dough chills for two hours before rolling out.

Ingredients
  

  • 3 cups all-purpose flour
  • 1 ½ teaspoons baking powder
  • ½ teaspoon kosher salt
  • 1 ½ sticks unsalted butter softened to room temperature
  • 1 cup granulated sugar
  • 2 large eggs at room temperature
  • 1 ½ teaspoons vanilla extract

Method
 

  1. In a medium bowl, mix together flour, baking powder, and salt.          
  2. In the large bowl of an electric mixer, cream butter and sugar at medium speed for 4 minutes, stopping halfway through to scrape sides of the bowl.
  3. Add eggs one at a time, beating well after each addition.
  4. Add vanilla and mix.
  5.  Slowly add flour mixture, beating just until combined.
  6. Split dough in half and wrap in plastic wrap, shaping into a disc.  Refrigerate for 2 hours.  
  7.  Preheat oven to 350°.
  8. Working on a floured work surface, roll out dough and cut into shapes.  Place on a cookie sheet lined with parchment and decorate as desired.
  9. Bake at 350° for 10 minutes.  Let cool on pan for 2 minutes and remove to wire rack to cool completely.
