Cranberry Cobbler
I have been making this recipe for years as it is a great compliment to the Enchiladas I make on Christmas Eve. Pop this into the oven right before you sit down for dinner and it will be nice and warm when you are ready for dessert.
Ingredients
- 4 cups Granny Smith apples washed, peeled, and chopped
- 2 cups fresh cranberries rinsed
- 1 ½ teaspoons fresh lemon juice
- 1 cup granulated sugar
- 1 ½ cups quick-cooking oats
- ⅓ cup light brown sugar firmly packed
- ½ cup butter melted
- vanilla ice cream
Instructions
- Preheat oven to 325°.
- Place apples and cranberries in an 11" x 7" baking dish.
- Pour lemon juice and then sugar over fruit.
- Combine oats, brown sugar, and butter until crumbs form. Spread over fruit mixture.
- Bake at 325° for 1 hour or until browned and bubbly. Let rest for 5 minutes and serve with vanilla ice cream.
