Pomegranate and Feta Salad
This is one of my aunt's recipes and it is perfect for the holidays with it's festive red and green colors! These days you can find pomegranate seeds already hollowed out in a container near the produce in your local grocer.
Ingredients
- 1 head romaine lettuce washed and torn
- 1 bunch spinach stems removed, washed and torn
- seeds of one pomegranate
- ¼ cup toasted pine nuts
- ½ cup crumbled feta cheese
- ⅓ cup extra virgin olive oil
- 1 Tablespoon red wine vinegar
- 2 Tablespoons maple syrup
- 1 teaspoon dijon mustard
- ½ teaspoon oregano
- salt and freshly ground pepper to taste
Instructions
- Toss the lettuce and spinach in a large salad bowl.
- Add the pomegranate seeds, pine nuts, and feta cheese.
- In a small bowl whisk together the olive oil, vinegar, syrup, mustard, oregano, salt, and pepper. Pour over the salad and mix well.
