Chocolate Peanut Butter Cupcakes

Two of my favorite foods, mixed together in one terrific cupcake!
Plan Ahead Note: the butter and egg need to be brought to room temperature,.

Ingredients
  

Cupcakes

  • ¾ cup flour
  • ¼ cup cocoa powder
  • 1 ½ teaspoons baking powder
  • dash of salt
  • ½ cup granulated sugar
  • ½ cup light brown sugar packed
  • ¼ cup butter softened
  • ½ cup creamy peanut butter
  • 1 egg at room temperature
  • ½ teaspoon vanilla extract
  • cup milk
  • ¾ cup semi-sweet chocolate chips

Frosting

  • 1 ½ cups powdered sugar
  • ¾ cup cocoa powder
  • ½ cup butter softened
  • 2 Tablespoons milk
  • 1 Tablespoon strong brewed coffee

Instructions
 

Cupcakes

  • Preheat oven to 350°.
  • Mix flour, cocoa, baking powder, and salt together in a small bowl.     
  •  In an electric mixer, combine sugars and butter and beat until well blended.
  • Add peanut butter, egg, and vanilla and mix well.
  • Add flour mixture, alternately with milk.  Add the chocolate chips.
  • Drop batter into muffin tins lined with paper muffin cups.
  • Bake at 350° for 20 minutes.  Let cool in pan for 10 minutes.  Once cupcakes are completely cool, frost with chocolate frosting.

Frosting

  • Mix powdered sugar through coffee in a food processor.
