Chocolate Peanut Butter Cupcakes

Two of my favorite foods, mixed together in one terrific cupcake!
Plan Ahead Note: the butter and egg need to be brought to room temperature,.
Prep Time 25 minutes
Cook Time 20 minutes
Servings: 12 cupcakes
Course: Dessert

Ingredients
  

Cupcakes
  • ¾ cup flour
  • ¼ cup cocoa powder
  • 1 ½ teaspoons baking powder
  • dash of salt
  • ½ cup granulated sugar
  • ½ cup light brown sugar packed
  • ¼ cup butter softened
  • ½ cup creamy peanut butter
  • 1 egg at room temperature
  • ½ teaspoon vanilla extract
  • cup milk
  • ¾ cup semi-sweet chocolate chips
Frosting
  • 1 ½ cups powdered sugar
  • ¾ cup cocoa powder
  • ½ cup butter softened
  • 2 Tablespoons milk
  • 1 Tablespoon strong brewed coffee

Method
 

Cupcakes
  1. Preheat oven to 350°.
  2. Mix flour, cocoa, baking powder, and salt together in a small bowl.     
  3.  In an electric mixer, combine sugars and butter and beat until well blended.
  4. Add peanut butter, egg, and vanilla and mix well.
  5. Add flour mixture, alternately with milk.  Add the chocolate chips.
  6. Drop batter into muffin tins lined with paper muffin cups.
  7. Bake at 350° for 20 minutes.  Let cool in pan for 10 minutes.  Once cupcakes are completely cool, frost with chocolate frosting.
Frosting
  1. Mix powdered sugar through coffee in a food processor.
