S’mores Bars

S’Mores Bars

Great for a crowd but they won't last long, they are highly addictive!
Servings: 48 bars
Course: Dessert

Ingredients
  

  • 4 cups rolled oats
  • 4 cups Rice Krispies cereal
  • ¾ cup granulated sugar
  • ½ cup unsalted butter
  • ¼ cup water
  • ½ cup light corn syrup
  • 1 teaspoon salt
  • 3 cups miniature marshmallows
  • 1 ½ cups dark chocolate chips

Method
 

  1. Preheat the oven to 425°.
  2. Lightly grease a half-sheet (18" x 13") pan. Place the oats on the prepared pan.
  3. Bake for 6-8 minutes, stirring frequently to prevent the edges from burning. They won't brown but they will begin to smell toasty.
  4. Remove the pan from the oven. Transfer the oats to a bowl and add the cereal.
  5. In a large saucepan, combine the sugar, butter, water, corn syrup, and salt. Bring the mixture to a boil and boil for 5 minutes.
  6. Remove the syrup from the heat and pour it over the oats and cereal, tossing to combine.
  7. Add 1 ½ cups of the marshmallows and stir again until well combined.
  8. Lightly grease the half-sheet pan again and place the mixture in the pan, pressing it until it is flat and even.
  9. Sprinkle with the remaining marshmallows and the chocolate chips.
  10. Bake the bars for 4-5 minutes, until the marshmallows have puffed and are slightly brown.
  11. Remove the bars from the oven and cool for about 10 minutes on a wire rack, longer if you want the chocolate to set up slightly. Cut into squares.
