Cowboy Cookies
These cookies are great if you want something a little different than just a plain chocolate chip cookie.Plan Ahead Note: the butter and eggs need to be brought to room temperature and the dough needs to chill for 20 minutes before baking.
Ingredients
- 1 cup butter softened
- 1 cup granulated sugar
- 1 cup light brown sugar firmly packed
- 2 eggs at room temperature
- 1 teaspoon vanilla extract
- 2 ¼ cups all-purpose flour
- 1 teaspoon baking soda
- ½ teaspoon baking powder
- ½ teaspoon salt
- 2 cups uncooked regular oats
- 1 12 oz. pkg. semi-sweet chocolate chips
Instructions
- Preheat oven to 350°.
- Beat butter at medium speed with an electric mixer until creamy.
- Gradually add sugars, beating at medium speed until mixture is light and fluffy.
- Add eggs, 1 at a time, beating well after each addition.
- Beat in vanilla.
- Combine flour and next 3 ingredients.
- Gradually add flour mixture to sugar mixture, beating at a low speed just until blended.
- Stir in oats.
- Stir in chocolate chips.
- Drop dough using a 1 oz. scoop or 2 Tablespoons onto a parchment-lined baking sheet.
- Chill 20 minutes or until firm.
- Bake at 350° for 12 minutes, rotating the pan after 6 minutes.
- Cool on pan for 2 minutes; transfer to wire racks, and cool.
