Cowboy Cookies

These cookies are great if you want something a little different than just a plain chocolate chip cookie.
Plan Ahead Note: the butter and eggs need to be brought to room temperature and the dough needs to chill for 20 minutes before baking.
Servings: 5 dozen

Ingredients
  

  • 1 cup butter softened
  • 1 cup granulated sugar
  • 1 cup light brown sugar firmly packed
  • 2 eggs at room temperature
  • 1 teaspoon vanilla extract
  • 2 ¼ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 2 cups uncooked regular oats
  • 1 12 oz. pkg. semi-sweet chocolate chips

Method
 

  1. Preheat oven to 350°.
  2. Beat butter at medium speed with an electric mixer until creamy.
  3. Gradually add sugars, beating at medium speed until mixture is light and fluffy.
  4. Add eggs, 1 at a time, beating well after each addition.
  5. Beat in vanilla.
  6. Combine flour and next 3 ingredients.
  7. Gradually add flour mixture to sugar mixture, beating at a low speed just until blended.
  8. Stir in oats.
  9. Stir in chocolate chips.
  10. Drop dough using a 1 oz. scoop or 2 Tablespoons onto a parchment-lined baking sheet.
  11. Chill 20 minutes or until firm.
  12. Bake at 350° for 12 minutes, rotating the pan after 6 minutes.
  13. Cool on pan for 2 minutes; transfer to wire racks, and cool.
