Chocolate Peanut Butter Sandwiches
You probably had these when you were little. Ritz crackers with peanut butter smeared in between two, dipped in chocolate. The sweet/salty combination is delicious! Tip: Do not substitute butter for the shortening. The shortening makes it easier to dip the crackers.
Ingredients
- 2 sleeves Ritz Crackers
- creamy peanut butter (I used Jif natural)
- 10 oz. semi-sweet chocolate chips
- 5 oz. bittersweet chocolate chips
- 1 teaspoon shortening
Instructions
- Spread a teaspoon of peanut butter between two Ritz Crackers. Repeat until all the crackers are made into sandwiches.
- In a double boiler over medium heat, melt the semi-sweet and bittersweet chocolate chips and shortening.
- Remove from heat. Using a rubber spatula, coat the cracker sandwich completely with chocolate.
- Remove with a fork and place on a parchment paper covered cookie sheet.
- Place in the refrigerator until chocolate is set.
