Chocolate-Oatmeal Parfaits

Plan Ahead Note: these need to chill for two hours.

Ingredients
  

Parfaits
  • 2 cups milk
  • cup granulated sugar
  • cup unsweetened cocoa sifted
  • 3 Tablespoons cornstarch
  • teaspoon salt
  • 1 egg
  • 4 oz. semi-sweet chocolate chopped
  • 1 teaspoon vanilla extract
  • 1 ½ cups Quick Oatmeal Granola (see below)
  • 3 cups thawed whipped topping
Quick Oatmeal Granola
  • ¼ cup honey
  • 2 Tablespoons butter melted
  • ½ teaspoon vanilla extract
  • 1 ½ cups uncooked regular oats
  • ½ cup flour
  • ¼ teaspoon salt

Method
 

Parfaits
  1. Whisk together first five ingredients in a medium saucepan over medium high heat, and cook, whisking constantly, for five minutes.       
  2. Gradually mix ⅓ cup of the hot milk mixture into the egg in a small bowl.
  3. Whisk egg mixture into remaining hot milk mixture.  Cook whisking constantly for 3 minutes or until thickened.
  4. Remove from heat and add chopped chocolate, stirring until chocolate melts.  Stir in vanilla.
  5. Pour mixture into a glass bowl.  Place plastic wrap directly on top of warm mixture to keep a film from forming and chill two hours.
Quick Oatmeal Granola
  1. Preheat oven to 350°.
  2. Make granola by stirring together honey and next two ingredients in a small bowl.    
  3. Stir together oats, flour, and salt in a large bowl.
  4. Add honey mixture to oatmeal mixture, stirring until combined.  Spread oat mixture onto a lightly greased baking sheet.
  5. Bake at 350° for 20 minutes, stirring often.
  6. To make parfaits, layer 1 ½ Tablespoons granola, 3 Tablespoons chocolate mixture, and ¼ cup whipped topping into each of the parfait glasses.  Repeat layers once and sprinkle the top of each parfait with 1 Tablespoon granola.  Serve immediately.
