Grandma’s Coffee Cake
Super quick and easy but fabulous taste for an after school snack or a tea party!
Ingredients
- 2 ½ cups all-purpose flour
- ¾ cup granulated sugar
- ¾ cup light brown sugar firmly packed
- ¾ cup butter melted
- 1 teaspoon ground cinnamon
- ½ teaspoon salt
- 1 teaspoon baking powder
- ¾ teaspoon baking soda
- 1 cup buttermilk
- 1 teaspoon vanilla extract
- 1 egg lightly beaten
Instructions
- Preheat oven to 350 degrees.
- Stir together flour, sugars, butter, cinnamon, and salt. Mixture will be very crumbly.
- Reserve ½ cup mixture.
- Add baking powder and baking soda to remaining flour mixture.
- Whisk together buttermilk, vanilla, and egg in another large bowl.
- Stir flour mixture into buttermilk mixture just until dry ingredients are moistened. Mixture will be slightly lumpy.
- Pour batter into a buttered and floured 9" springform pan. Sprinkle with reserved flour mixture.
- Bake at 350° for 45-50 minutes or until wooden pick inserted in center comes out clean.
- Cool in pan on a wire rack for 15 minutes; remove sides of pan, and cool completely (about 1 hour).
