Orange-Ginger Muffins

Orange-Ginger Muffins

These are great for breakfast or an afternoon snack! For the best flavor use fresh orange juice and orange rind.

Ingredients
  

  • 2 cups all-purpose flour
  • 2 ½ teaspoons baking powder
  • ½ teaspoon salt
  • ¼ teaspoon ground ginger
  • cup granulated sugar
  • 1 egg beaten
  • cup milk
  • ½ cup fresh orange juice
  • ¼ cup canola oil
  • 2 teaspoons grated orange rind

Instructions
 

  • Preheat oven to 375°.
  • Combine flour through sugar in a bowl and mix well.
  • Combine the egg, milk, orange juice, oil, and orange rind and add to the flour mixture, stirring just until moistened.
  • Spoon batter into greased muffin tins, filling half full.
  • Bake at 375° for 15 minutes or until light golden brown and a wooden pick inserted into the center of a muffin comes out clean. Cool in pans for 5 minutes and then remove to a wire rack to cool completely.
