Orange-Ginger Muffins
These are great for breakfast or an afternoon snack! For the best flavor use fresh orange juice and orange rind.
Ingredients
- 2 cups all-purpose flour
- 2 ½ teaspoons baking powder
- ½ teaspoon salt
- ¼ teaspoon ground ginger
- ⅓ cup granulated sugar
- 1 egg beaten
- ⅔ cup milk
- ½ cup fresh orange juice
- ¼ cup canola oil
- 2 teaspoons grated orange rind
Instructions
- Preheat oven to 375°.
- Combine flour through sugar in a bowl and mix well.
- Combine the egg, milk, orange juice, oil, and orange rind and add to the flour mixture, stirring just until moistened.
- Spoon batter into greased muffin tins, filling half full.
- Bake at 375° for 15 minutes or until light golden brown and a wooden pick inserted into the center of a muffin comes out clean. Cool in pans for 5 minutes and then remove to a wire rack to cool completely.
