Steak Tacos with Lime Mayo
While you may be tempted to leave off some parts of these tacos, trust me, every items builds on the other for a really great twist on classic tacos.
Ingredients
- 2 red bell peppers sliced thin
- olive oil
- 2 teaspoons ground chipotle chile powder
- 2 teaspoons paprika
- 1 teaspoon kosher salt
- 2 1lb. flank steaks
- 6 Tablespoons mayonnaise
- 2 teaspoons grated lime rind
- 2 Tablespoons lime juice
- 1 teaspoon minced garlic
- 2 teaspoons water
- 10 6" corn tortillas
- 1 cup refrigerated fresh salsa
- 1 cup shredded queso fresco
Instructions
- Toss the red peppers in a grill basket with some olive oil.
- Combine chipotle powder, paprika, and salt; rub spice mixture evenly over steak.
- Over medium heat of a grill, add the basket of peppers and flank steak. Grill the steak 8 minutes a side, and the peppers an additional 5 minutes.
- Remove the steak and let rest for 5 minutes. Thinly slice the steak against the grain.
- Combine mayonnaise, lime rind, lime juice, garlic, and water, whisking well.
- Working with 1 tortilla at a time, heat tortillas over medium heat directly on the burner of the stove for about 15 seconds a side.
- Place steak on a tortilla, add some red pepper, salsa, cheese, and mayonnaise.
