Cast-Iron Burgers

When it is too cold to put burgers out on the grill, this is the best recipe for flipping them on the stove.

Ingredients
  

  • 1 lb. ground sirloin
  • ½ teaspoon kosher salt
  • 1 Tablespoon mayonnaise
  • 1 Tablespoon mustard
  • 2 teaspoons ketchup
  • 2 slices applewood bacon chopped
  • 3 cups sliced yellow onion (1 large or 2 small)
  • 1 Tablespoon finely chopped chives
  • 1 teaspoon Worcestershire sauce
  • ¼ teaspoon freshly ground black pepper
  • 4 hamburger buns or Kaiser rolls
  • 4 ¼" thick tomato slices
  • 1 cup shredded butter lettuce

Instructions
 

  • To prepare the patties, divide the beef into 4 portions, lightly shaping each into patties and sprinkle with salt.             
  • Cover and refrigerate 30 minutes.
  • To make the sauce, combine mayonnaise, mustard, and ketchup and set aside.
  • Cook bacon in a nonstick skillet over medium-low heat until crisp. Remove bacon from pan with a slotted spoon.  
  • Add onion to drippings in pan, cook 15 minutes or until golden brown.
  • Combine bacon, onions, chives, Worcestershire sauce, and pepper in a small bowl.
  • Heat cast-iron skillet over medium-high heat.
  • Add patties; cook 2-4 minutes on each side until done.
  • Spread 2 teaspoons sauce on bun.  Add patty, onions, a tomato slice and lettuce.
