Cast-Iron Burgers
When it is too cold to put burgers out on the grill, this is the best recipe for flipping them on the stove.
Ingredients
- 1 lb. ground sirloin
- ½ teaspoon kosher salt
- 1 Tablespoon mayonnaise
- 1 Tablespoon mustard
- 2 teaspoons ketchup
- 2 slices applewood bacon chopped
- 3 cups sliced yellow onion (1 large or 2 small)
- 1 Tablespoon finely chopped chives
- 1 teaspoon Worcestershire sauce
- ¼ teaspoon freshly ground black pepper
- 4 hamburger buns or Kaiser rolls
- 4 ¼" thick tomato slices
- 1 cup shredded butter lettuce
Instructions
- To prepare the patties, divide the beef into 4 portions, lightly shaping each into patties and sprinkle with salt.
- Cover and refrigerate 30 minutes.
- To make the sauce, combine mayonnaise, mustard, and ketchup and set aside.
- Cook bacon in a nonstick skillet over medium-low heat until crisp. Remove bacon from pan with a slotted spoon.
- Add onion to drippings in pan, cook 15 minutes or until golden brown.
- Combine bacon, onions, chives, Worcestershire sauce, and pepper in a small bowl.
- Heat cast-iron skillet over medium-high heat.
- Add patties; cook 2-4 minutes on each side until done.
- Spread 2 teaspoons sauce on bun. Add patty, onions, a tomato slice and lettuce.
