Treat Tuesday-Ginger Loaf Cake

Welcome to November! It’s time to start thinking about the holidays and company coming!! This Ginger Loaf Cake is great for putting out for a holiday breakfast. It is pretty quick to make and it is nice and easy to slice and place on a platter for everyone to help themselves.

Start by whisking together the flour, cinnamon, baking soda, salt, and nutmeg in a bowl.

Next beat the butter and sugar until light and fluffy.

Add in the eggs one at a time.

Then add in the flour mixture, alternately with the molasses and milk.

Finally, peel and grate a ginger root. (not the most attractive food item to photograph!) You want the ginger very finely minced. I used about a quarter of a cup even though the recipe calls for half a cup and it was the perfect amount of ginger flavor. It’s kind of a pain to grate the ginger, but the flavor is totally worth it! Fold into the batter.

Spoon the batter into a prepared pan, smoothing out the top.

Bake for 1 hour or until golden brown.

While the cake is cooling, whisk together the powdered sugar and milk.

Slowly spread the glaze over the whole cake.

This won’t last a day!
