Sour Cream-Chocolate Bit Cake
This is one of my mom's recipes that I think lends itself well to Christmas morning because it is quick to assemble and makes a great holiday coffee cake with the cinnamon and the chocolate.Plan Ahead Note: the butter needs to be softened to room temperature.
Ingredients
- 6 Tablespoons unsalted butter softened
- 1 cup granulated sugar
- 2 eggs
- 1 ⅓ cups all-purpose flour
- 1 ½ teaspoons baking powder
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1 cup sour cream
- 1 6oz. pkg. mini semi-sweet chocolate chips
Instructions
- Preheat oven to 350°.
- In the bowl of an electric mixer, mix butter with 1 cup sugar until well blended.
- Beat in eggs one at a time.
- Stir together the flour, baking powder, baking soda, and cinnamon.
- Alternate adding in the flour mixture with the sour cream until just blended.
- Pour batter into a greased and floured 13" x 9" baking dish.
- Scatter mini chocolate chips evenly over the batter.
- Sprinkle the top with 1 Tablespoon granulated sugar.
- Bake at 350° for 35 minutes. Let cool slightly and cut into rectangles.
