Sour Cream-Chocolate Bit Cake

This is one of my mom's recipes that I think lends itself well to Christmas morning because it is quick to assemble and makes a great holiday coffee cake with the cinnamon and the chocolate.
Plan Ahead Note: the butter needs to be softened to room temperature.

Ingredients
  

  • 6 Tablespoons unsalted butter softened
  • 1 cup granulated sugar
  • 2 eggs
  • 1 ⅓ cups all-purpose flour
  • 1 ½ teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1 cup sour cream
  • 1 6oz. pkg. mini semi-sweet chocolate chips

Method
 

  1. Preheat oven to 350°.         
  2. In the bowl of an electric mixer, mix butter with 1 cup sugar until well blended.
  3.  Beat in eggs one at a time.
  4. Stir together the flour, baking powder, baking soda, and cinnamon.
  5. Alternate adding in the flour mixture with the sour cream until just blended.
  6. Pour batter into a greased and floured 13" x 9" baking dish.
  7. Scatter mini chocolate chips evenly over the batter.  
  8. Sprinkle the top with 1 Tablespoon granulated sugar.
  9. Bake at 350° for 35 minutes.  Let cool slightly and cut into rectangles.
