Chocolate Peanut Butter Cupcakes

Ingredients
Cupcakes
- ¾ cup flour
- ¼ cup cocoa powder
- 1 ½ teaspoons baking powder
- dash of salt
- ½ cup granulated sugar
- ½ cup light brown sugar packed
- ¼ cup butter softened
- ½ cup creamy peanut butter
- 1 egg at room temperature
- ½ teaspoon vanilla extract
- ⅔ cup milk
- ¾ cup semi-sweet chocolate chips
Frosting
- 1 ½ cups powdered sugar
- ¾ cup cocoa powder
- ½ cup butter softened
- 2 Tablespoons milk
- 1 Tablespoon strong brewed coffee
Instructions
Cupcakes
- Preheat oven to 350°.
- Mix flour, cocoa, baking powder, and salt together in a small bowl.
- In an electric mixer, combine sugars and butter and beat until well blended.
- Add peanut butter, egg, and vanilla and mix well.
- Add flour mixture, alternately with milk. Add the chocolate chips.
- Drop batter into muffin tins lined with paper muffin cups.
- Bake at 350° for 20 minutes. Let cool in pan for 10 minutes. Once cupcakes are completely cool, frost with chocolate frosting.
Frosting
- Mix powdered sugar through coffee in a food processor.
